Hover Text and Accessibility
This is probably a rookie question, but i don't usually make courses with hover text and with my current project i found myself forced to go there. If i have text that shows up when a user hovers over something, does that text get captured by a screen reader or when the user does not use a mouse (either because they just use the keyboard, a joystick type device, or because they are on a tablet)?

Hovering over an object isn't recognized by a screen reader. If your course uses hover states, consider providing a keyboard-accessible alternative to displaying text or images. You can check out our articles here on how to make your course accessible for your learners:
