Is it possible to report on multiple quizzes in Storyline?

Yes, that's possible. When you publish the course, indicate that it should track all 3 quizzes as final assessments. Storyline will report whichever quiz is finished first—which would be the quiz associated with the chosen role.
Here's an example of how the Tracking would look (except with only 2 quizzes):
