Is there a way to have (1) a custom course player, and (2) Notes checked in the Slide Properties for all slides, but (3) be able to turn off the Notes just by unselecting it on the menu in the course player? My team produces two versions of each course: 1 for the learner (no notes) and 1 for the facilitator (with notes). Our courses are quite large at times. It would be really efficient to easily turn on/off notes from the course player, instead of individual slides.

Happy to chime in!
The slide properties for each slide overrides any default setting enabled in the Player. This means that if you have the 'Notes' tab enabled in slide properties and you disabled 'Notes' in the player, the 'Notes' tab will still be visible for the slides that have them enabled.
If you want to make the same property changes to multiple slides at the same time, use Story View. Simply select all of the slides where you'd like to disable the 'Notes' tab and uncheck them in the lower right corner.
