I'm unfamiliar with how Microsoft Teams generates its link thumbnails, but one thing you can try is to republish your course in Review 360 to see if this helps. Note that existing comments in your course won't be carried over to the new project if you decide to republish. Additionally, you can try generating a new link in Microsoft Teams to see if this refreshes the thumbnail.
