To help isolate the issue, please check with your IT staff to see if your organization still allows the creation of .doc files. When publishing courses to Word format, the resulting output is created as a .doc document and not the newer .docx format. Some organizations have discontinued supporting .doc files which can cause the published output to not appear after a successful publish.
If your organization doesn't restrict the creation of .doc files, try doing a repair of Storyline 360 to see if this helps address the behavior. Just a note that you'll want to publish to a local directory in your computer to prevent any issues caused by publishing to a network drive.
