To build your skillsets in Articulate, I would recommend starting here or using Udemy (when the courses are on sale) to learn more.
For your portfolio, I would do a fun project that you are passionate about. Like for me I plan to do a storyline course on plants because it's something that I love. I also use samples of things I previously created that doesn't have proprietary information in it!
