Agreed. This is one of the biggest challenges people face which is why I think it's important to create projects outside of work as well. The weekly E-Learning Challenges are a great way to do that since you're not creating projects with proprietary content. You don't even have to create full courses. Even a small assortment of projects that demonstrate your design thinking and skills are helpful,
Absolutey but not just any E-Learning Challenges; those that demonstrate the kind of work done for those proprietary projects so you can go to a potential employer and say while I can't show you X, this example demonstrates the same kind of interactions/concepts from X.
