Although I can't share my real projects, I'd add that apart from avatars and names, using text variables to adjust parts of the course text can be very useful for "localisation" of training material for countries with the same language but with local differences (E.g. US/UK or Germany/Austria), or to adjust the training to the needs of new hires vs veteran employees. This way you don't need to create (and maintain) two or more courses for each audience. Doesn't count as gamification, but it's still useful. :)
