If you add some of your own tabs to the player (say, in the upper right where Resources usually is), is there any way to make them not available on a particular slide? I see how you can customize the player with the standard options (Menu, Resources, Glossary, etc.) for particular slides. But I can't find a way to hide custom player tabs, for example, on quiz slides.
If you've enabled the player exit tab, that'll appear throughout the course as it's a custom tab. You could also created your own exit button and have that appear on one slide.
There is still a "bug" with custom player tabs in HTML5 lessons - reported again Case #01558671 The triggers to alter behaviour with variables are available, they simply don't work. If like me, you thought you were losing the plot, I've attached my demo so you can compare.

Same. I want the option to be able to print certain slides, but not all. I've created a new tab and added in the trigger to print (using java script) but I don't want this available on every slide, just a certain few. Any work around anyone knows about?

You cannot hide any custom tabs you create. at the moment it only allows you to hide the default tabs

Is this still the case? I see that this conversation was almost 5 years ago. Am I able to have an exit tab on every slide but one?

The custom tabs still work in the same way.
If you wish to only have an Exit Course option on the last slide, you could do this by adding a button to the slide with an Exit Course trigger.
