The size of the text panel is not able to be modified when using 360° images. You are only able to modify the size of the marker panels when the marker is not added to a 360° image.

I'm curious to hear if anyone in the community has come up with a creative design that they'd be willing to share as inspiration for when a lot of text is in the mix in a hotspot or marker for a 360° image!
