Formatting objects in graded questions
I want to use a matching drag-and-drop graded quiz question, but I need to change the style of the drag and drop objects.
E.g. remove the gradients, change the colour of the selected/dropped states, change the colour of the fonts.
Is this possible with the built-in graded question or do I need to create a freeform question?

Unfortunately there isn't a built-in way to customize the matching drag-and-drop gray bars, although I think this would be a nice enhancement that many users could benefit from. The development team does take feature requests seriously, so if you have an opportunity, this would be a good request to submit.
In the meantime, I think a freeform drag-and-drop interaction like you mentioned would work best for your project. You'd certainly have more control over the style of the objects and you'd be able to customize them as much as you'd like.

Is this still the case? Curious if there have been any updates and this is now something allowing for users to format the graded drag and drops outside of the standard gray.

The matching drag and drop will still use the grey coloring, but you could customize the colors fully if you created a freeform drag and drop.
This looks to be the case still right? Rise360 UI is so polished and modern :) but the storyline UI seems to be 10 years old with contoured grey button and old school coloring. Woul be awesome to see the form/quiz UI look more like this website or Rise360!

Agreed. Rise is great, but it's too "one-size-fits-all" for my clients. The Storyline templates look great in the gallery, but when you insert them, they just import basic placeholders. Most of the design work is left in the gallery. Now, we have to create all of our elements and triggers from scratch. It's do-able, but very time-consuming. It would be great to see Storyline incorporate a Graded-Question Element master, similar to the Feedback Master.

Yes, that is correct. The built-in graded questions still make use of the default grey coloring. I understand that having more customization options here would help authors create more visually appealing courses. I’ll be happy to pass your thoughts on to our product team, but you can also feel free to detail them more through a feature request!
Only 7 years since this was raised...seems ridiculous these objects can't have editable states...makes a mockery of trying to keep a consistent style in a set of varied quiz slides.
