Thanks for reaching out! I understand you'd like to know if you can set the publishing output folder to something other than the Documents folder.
Currently, you’ll want to set that folder up on a per project basis in the Publish window. When creating a new project the default folder will be the Documents folder. After changing the folder within the project and saving the project, the output folder will continue to be the one you chose.
We don’t have an option for changing the publishing output folder once for all projects, but that sounds like an interesting idea that I can share with our product team.
