Go into Themes. Select Navigation and then Sidebar. From there you can select if you want solid color or image and also different ways for the sidebar to display.
How can I make my logo the picture at the top of the navigation bar and not have it one of my course pictures?

Can I ask if you are referring to editing this particular image?
If so, the option to edit this image can be found in "THEME -> Cover Page -> Course Image". Note that this option will appear slightly different if the course you are working on is a Microlearning course.
