Unfortunately, I'm not aware of a way to turn off the ability to adjust the animations on the timeline, but you're welcome to submit a feature request through this link, sharing how this feature would benefit you!
If possible, for your design and process, it might be a good idea to only insert the entrance/exit animations once you're done syncing the items on the timeline.
