Rise 360 Lesson Types

You are looking at Rise functionality that has not existed for at least 5-6 years.
At that time. you could only have one block type per Lesson. That's why you see the Process label in the screenshot, as it indicates the type of block used in that Lesson.
Articulate then improved Rise to allow you have different types of Blocks in the same Lesson.
If you today try to edit an old Rise course that still is a one block type per Lesson, you will be prompted to convert it to a Blocks Lesson (the current type of Lesson).
When creating a new lesson today, your two options are Lesson or Quiz.
