There isn't a way to remove shared content you don't own from the Team folder. The content in the Team folder and all its subfolders show all courses that have permission to be viewed by team members.
You can change the view here to show only the courses you own to reduce the number of courses visible on your dashboard.
One solution would be to remove team members who are no longer part of your team. You can check out this article to learn more about what happens to shared content when someone leaves the team:
