Searching for resources on how to capture/export individual quiz responses

Hello All,

I have a need to pull the results of both scored and unscored (Likert) questions such that I can work with the results from those who complete the questions.  I am working with an old LMS with limited functionality.  Where can I find both (a) the basics on how to export quiz results and (b) current best practices on the same?  Thank you all for your help.
