I could spend all day every day just playing around with new ways to create courses and developing/learning new skills (rather than the unfortunate circumstance of sustaining current skills to maintain our current work load while scrambling to implement the "newness" :/ )

Playing around is essential for learning. In fact, it's also a a great way to expand your portfolio. Some of the best portfolios combine completed courses and prototypes demonstrating your range of skills and open-minded approaches.
Find boring content or courses - even ones you've worked on - and re-design parts of them to show what it could have been. That would be a fun thread! I hope you'll consider this community as a learning sandbox to help build your portfolio.
