I just created a simple sample file to test this behavior but was unable to replicate the issue.
Do you experience the same issue with my published output here?

When publishing to Review 360 or to Web and viewing it on an iPad the text variable does not work in my file. If viewed on a desktop computer it functions correctly. I will upload a sample shortly.
