I agree, there is no feature in Storyline 360 to replace characters at once.
Here's what I do.
I tried to replace multiple images at once by replacing images files after published.
In the picture shown below, I copy the filename of the generated image and delete the file, then rename Picture4.png with the generated filename on the left.
