You can change what the label says by going to the Format of the block and changing the label (or just press your spacebar in the label section if you don't want to name the numbers), but there will always be a number at the top of the process block.
There is something unpleasing (visually) about those labels so removing them is a common customization on this block. Because these labels pick up the theme's accent color, it kinda looks more like a button to click on, than a helpful label. I may try to redesign it if anyone has some ideas.
