The Next and Prev buttons in the image you attached aren't the standard navigation buttons in the Player. They are custom buttons placed on the slide.
If you want to create a course with a similar look and feel:
Hide the Player's Prev and Next buttons by deselecting their checkboxes in the Slide Properties. (You can do this quickly by selecting all the slides in STORY VIEW, and then deselecting the checkboxes.)
Create and program your own Prev and Next buttons to appear on the slides.
If you put the custom buttons on the Master Slide, they'll appear on all slides.
Note that you won't be able to use a trigger on a slide to change the state of those buttons. (A slide doesn't have access to Master items.) Instead, you could put a copy of the button directly on the slide, and then program that as needed.
