When resizing objects in Storyline 360, click on the object and a box should appear around the object. Click and drag the handles on the corners and sides of the box to resize the object. Holding the shift key while clicking and dragging the handles will keep the width and height of the object uniform. Also, here are some articles about object editing.
No, but I wouldn't use the built-in one anyway. If you create your own, you can control the size, font, color, and visibility. With the same Submit trigger, it works the same.
I don't know how such a tiny checkmark/submit button got approved all the way to a released version of SL. I guess nothing should surprise me anymore about this product/company.
You can change the navigation buttons (including the Submit button) to include the word and the icon. Navigate to Player Properties > Colors & Effects > Button styles:

The checkmark is not visible when editing, so there's nothing to resize.
