Accordions have to be opened to complete course?

It sounds like the Continue button is set to "Complete All Blocks Above." With that, it would require the user to do the interaction, the accordion transcript, and the knowledge check.
Set the Continue button to "Complete Block Directly Above," and it will only require completion of the knowledge check.
