We're tracking requests for an asset/media library in Rise. If implemented, this can be the solution you are looking for with tracking and managing the media you are using in Rise. We'll keep you posted on any updates on this request.
In the meantime, I'll defer to the community for further suggestions on creating a catalog and managing images in your course.
