If you only want to allow the user to choose one option, then Multiple Choice will be a better option:
Let me know if that's not exactly what you're looking for.

I want it to look like a multiple choice question, but I want every answer
to be correct and provide unique feedback for each answer.
Is that a bit sneaky?

You should follow the web conventions of radio buttons for single select and check boxes for multiple select, this helps reduce the cognitive load as users will list your course with preconceptions built form years on the web
