Hi,
I was able to sort it out; I ended up checking and adjusting the screen resolution settings on my computer to a lower quality setting and my entire screen was then available to record. It was several weeks ago but I believe I changed it from the original 1920 X 1080 to 1280 X 720.
Unfortunately that didn't fix my issue but, I'm glad it worked for you!
