Text Entry Journal: Type, save, exit, resume, and keep writing in the same text entry field

I have scoured this discussion forum for a possible solution to an issue I'm having creating an editable handbook to accompany a live training. I want to create text entry fields that users can type notes in and then return to and edit at a later time (i.e., after leaving the course and resuming). I've seen many examples of how to create a "journal" that is essentially a text entry quiz with one-time text entry only. Has anyone figured out how to make a text entry field behave more like a Google doc or word? If not, has anyone found a good alternative for using embeddable text entry from another app? Thanks for any ideas or suggestions!
