Hi Karine,
Here are some examples that I saved as my favourites:- Made By Members: Games & Gamification | E-Learning Heroes
- Video Game Top-Down with Arrow Key controls | E-Learning Heroes
- HEIST | E-Learning Heroes
Perhaps there are some inspiring elements that can help you :)

Not sure if you already saw the Share Examples section of the site, but that hosts a lot of different project files that contain game-like elements.
Recently there I've seen an example new hire onboarding styled as a scavenger hunt. There are a handful of escape rooms that could feasibly be altered to contain historical information for a humanities course. I've personally made a few proprietary courses that taught interfaces in a way that was very gamified. A lot of what people interpret as "video game" comes down to visual polish and animation effects, which means on some level most anything can be "video game-themed."

It's a vague enough phrase ... to me, "video game themed" would mean "has some kind of characters and a scoring system, or at least a defined win condition."
