I was able to locate a couple of community threads that might help in the meantime! The first thread allows you to set a Character limit on Text Entry interactions using Javascript here and there is a similar workflow that might help here.
The feature to restrict the number of characters entered into a text entry field hasn't made it on our roadmap. If this would be a beneficial addition to Storyline 360, you can share it in the form of a feature request! We'll keep this discussion updated if it makes it on our feature roadmap.
