Are there e-learning challenges for beginners?

If you have a license for Articulate 360, you can access all their on-demand-training videos. That includes quite a few for beginners:

This link goes to all of the guides. Bookmark the individual guides you're most interested in. They provide an excellent overview of how things work.
There's even a User Guide for Storyline 3 if that's what you're using.
Since you mentioned states, here's the User Guide page for that topic:
Articulate characters come with lots of different expressions and poses -- all potential "states." For most objects, the developer has to locate whatever they want to include in the states. For example, to create the dice, the developer would have started out with an image of each side of the die.
As you start learning about different steps, I suggest you challenge yourself to use what you're learning. You might start with trying to re-create some of the interactions you've seen.
