How do you get rid of it? Due to the nature of the my industry, we are not allowed to use it and I would like to just disable it.
You were required to opt out of the AI trial if you did not want to participate. Your Articulate Teams Administrator should be able to opt you out of it. If that does not work:
Why not just downgrade the current version to the one older from Articulate 360 launcher?
I can't see that I can use the AI trial. I signed up for it (current user) and when I get the confirmation email, it just does nothing. I clicked the link and it takes me to my 360 acct. Did I miss something?

Happy to help! It looks like an admin has turned off AI features for your subscription. When AI features are turned off, AI Assistant tools still display in Rise 360 and Storyline 360 but aren’t functional. Can you please confirm if this is what you see?
If so, you can ask one of your team admins if it’s possible to turn on AI features for your team. Please don’t hesitate to reach out if you have additional questions.
