As Richard said above, the Content Library is a great resource for visual content.
Part of the challenge of the challenges is deciding what information to present. For some challenges, you could use Ipsum Lorem text (i.e., nonsense text used as a placeholder).
When how you handle the information is important (e.g., for your portfolio), you could write about something you know. In other words, act as your own SME.

Thanks Judy, I did not want a bunch of English teacher examples in my portfolio as I'm trying to break away from that.

What about your hobbies and other interests? Or something you've wanted to research a bit?
As I recall, one of Tim Slade's early portfolio pieces was how to cook a turkey.
You don't need a full-blown course. Just some interesting interactions for presenting content.
