You can turn off all Player controls. Open the Player, and then select "Off" in the Menus & Controls dropdown.
If you just want to turn off the Previous and Next buttons/triggers, you can do that by deselecting those buttons in the Slide Properties.
You can deselect the buttons for all of the slides at the same time. To do that, go to STORYVIEW. Select all of the slides. Then adjust the Slide Properties, which appear in the lower right.
