Exporting Rise360 projects to ZIP

TL;DR: Not possible.
After a very long back-and-forth email with support, they confirmed it that it would not be possible to do such thing as export-import. It is what I have feared --which possibly by design-- and also mentioned long and wide in the replies.

No, they cannot import the exported zip file back into Rise to make edits. Due to Rise's cloud-based nature, they'd need a subscription first, and then you would have to send them a copy using the "send a copy" feature. Otherwise, they will have to rebuild the courses.
