Would I need to have English and French translated versions to import into two separate courses?
If you want the language of the player to match the course's language, then you'll need to create two different ones. However, take a look at the article below for suggestions and workarounds:

I cannot seem to download storyline for mac
You can install Storyline on an intel Mac using a virtual Windows Machine (Parallels, VMWare, etc.). We have the FAQ below with additional information:
