Is there a way to ensure that the user completing the course, must flip cards, or expand the accordian features before moving on to the next section?

Yes, under Divider blocks, choose the Continue block. Then, you have the choice of a simple continue button, a button that tells the user to complete the (interactive) item directly above in order to continue, or a button that tells the user to complete all (interactive) items above in that lesson in order to continue.
