Is there an option to change the quiz settings for courses so that clients need to answer quiz questions correctly.
So that once they answered incorrectly it only shows "incorrect" without the correct answer options.
And the requirement that they have to retake it before moving on with the course...
So far they could simply skip everything and still reach the 100% for the course...

It sounds like you're talking about Knowledge Check blocks. There's no way to hide which are the correct options in the feedback nor to require passing them. Their purpose is to simply provide a bit of practice and (hopefully) helpful feedback that can be presented throughout the course.
In Rise, an actual Quiz exists as a separate lesson. Those questions don't provide feedback on each question. The settings for a Quiz can require that the user passes before they can continue. You can insert multiple Quiz lessons into a course. However, only one Quiz can be used to track completion.
