Happy to help!
The checkbox list will always be unchecked upon resuming the course, but I understand that you need this behavior to be different. We currently have a feature request open to allow checkbox lists to show what a user has checked off before exiting a course. I've added this post to the report so we can notify you as soon as it makes it to our product roadmap.
Some community members shared Javascript-based workarounds here if you're interested in this solution!
