Courses to Teach Employee Handbook Policies
Any thoughts on how to make this boring, dry, but necessary subject fun? Themes, etc?

Great question! This is one that we get a lot. The key here is to focus on why these policies are important and when employees will need to use them and create a course that focuses on those things.
When learners understand the importance and utility of information, they're generally engaged and there's no need to add bells and whistles.
I recommend taking a scenario-based approach so the content is as closely tied to their day-to-day as possible.
