The editing of "lessons" in templates is straight forward; however, I'm can't figure out how to edit and customize the "Course Preview" in the template. I've created a course, but I'd like to change the title from the template's title as well as the image. Is this possible or do I need to duplicate the course just to edit that single preview page?

Just click on the Course Title and edit it.
The course Cover Page can be changed in Themes.

I'm glad to see that Karl is helping you out here. I'm curious if you are asking about a Next Big Idea Club template. If so, what do you mean by "Course Preview?" Is it the author's information shown below, or is it something else?
