I can't increase the width of drop down interaction bars?
With no text wrap and "Resize shape to fit text" selected, the drop downs look like:
The other options (wrap text or shrink text on overflow) look really bad:
All size adjustments are disabled:
How can I increase the width of the drop down bars so that the text fits without shrinking? The shrunk text is too small to read and is not ADA compliant.

That's why no one ever uses these pre-made activities, which look like they were created a century ago and forgotten in a drawer! They're ugly, can't be adjusted, and can't be modified in color and shape to fit your client's graphic charter.
Forgive me for joking.
In my opinion, you're going to have to start creating your own fully customizable drop-down list activity. It's not that complicated to do (but avoid certain tutorials that are unnecessarily TOO complicated).I took up the challenge and created the equivalent of your screenshot in... 23 minutes (really).
As you can see in the .story file, I copied the look of the original activity a little and changed the shapes and colors a little. It's entirely up to you!
There are few layers (1 by bar), few triggers, and I added some visual feedback on the result layers. It's up to you. Try one or more correct or incorrect answers.
And everything is customizable in terms of graphics and text content. Be sure to design the first answer and the first layer exactly as you want them. And name the bar states correctly. You can then copy and paste and adjust the triggers for the other bars.
Using this principle, you can insert these drop-down lists into a text.Once you are familiar with how to build this activity, you will be able to do it even faster, and make it more complicated if you wish.

For Sequence/Matching Drop-Down Slides, it is not possible to manually set the width or height of the drop-down boxes beyond what Storyline determines. We are tracking a feature request to introduce this level of functionality and I've included your voice in the report.
Also, part of what you shared is related to a bug in Storyline 360. This bug causes Text to overflow a drop-down field, if the text is set to autofit it's container. I've linked this discussion to the bug report so we can notify you as soon as a fix is ready. In the meantime, as a workaround, we suggest reducing the text to a smaller size. However, I do understand this may not be ideal for our accessibility-focused authors.
