I only want one video to play at a time.
I am working with Storyline 360 and have four videos embedded on one slide. The problem is that when one video is playing and the learner clicks another, the first video keeps playing in the backgrou...

One way: on Video 1, add Triggers that say "Pause media n when user clicks Video 1". N goes from 2 to 4 for the three triggers.
Do the same for each of the four videos, essentially saying "Pause all the other videos when the user clicks this one."

If you were to upload a .story file here (it can contain just that one slide) people could probably fix it in short order.

Here's a version that works. Note: it doesn't rewind the videos. If you look at what I did with triggers, you should be able to figure out how to rewind them (if you want that behavior). If not, ask.
