Hello Clare,
I want to see if we can isolate the issue to videos that are published from your installation. Here's the video output of your course that was published on my end, let me know if you see any improvements in the quality of the video.
If my video output does not have the issues that you experienced, try doing a repair of your Storyline 360 installation. You'll also want to make sure that you are working out of a computer that meets the system requirements needed to run Storyline 360.
