We have several people working on our Rise courses and it seems VERY easy to delete a section, or even a complete course if one is really careless. There isn't a robust UNDO feature. How are people managing versions and back ups?

You can duplicate the course and save it as a backup. You can do it once a day or every couple of hours or only when you are about to make massive changes. This depends on the frequency or amount of changes being done in the course.
