Story Size
We are considering moving from Captivate Classic to Storyline 360 and I have immersed myself in the E-Learning Heroes videos to gain as much knowledge as possible. We primarily do software simulation and, in Captivate Classic, we capture that simulation at 1280x720. Once captured, we rescale the project to 1280x850 and position the screen capture top/center in order to add instruction boxes at the bottom that do not interfere with the captured screen.
As mentioned, I've been watching a LOT of videos and I ran into a couple for Storyline that show how to do this - in particular, Setting Your Slide Size in Storyline | Articulate - Community. However, when I try to follow along with these instructions, I do not have a "Change Story Size" dialog box wherein I can set the "Story Position." Has this feature been removed? Am I blind as a bat?
I know that I can enable Closed Captioning, but it doesn't give me the same effect as how we have done it in Captivate Classic and we're trying to minimize our content changes for our client base. It may be that we have to find a new way of doing things but if this is a hidden feature, someone help me find it!

I believe the tutorial you watched is outdated and does not reflect the latest version of the Storyline interface. I don’t recall seeing those options — especially the “Story Position” option. It may have been removed a long time ago, and it’s not part of the current interface. You may want to check this post for more up-to-date information and additional insight.

In the latest build, you go to the Design tab and click Slide Size Setup. Otherwise, how you set these ratios is exactly the same as in the video.

Thanks for your feedback but I'm specifically looking for the "Story Position" command which does not appear to be available in the Slide Size Setup dialog box.
