Hi. Can you tell me please, how this affects course completion? For example, if the package has multiple quizzes and they complete some in English and some in French, will they be able to get a completed status in the end?

Great question!
A multi-language Storyline course using Language Code Variables should not influence completion status for LMS reporting. Even if the learner switches between languages mid-session. Completion data is sent by a SCORM 2004 element called cmi.completion_status. Which is completely separate from the langCode element of published SCORM packages.
For testing, I created a multi-language .story file with multiple quizzes and Variable Triggers. Allowing the learner to switch between English and French mid-session. Once finished, Storyline still reported 100% completion status to SCORM Cloud.
