Creating a Review 360 Deadline?
Is there a way to automatically close a review after a set deadline so it no longer accepts new comments?
Our main challenge is that reviewers continue adding feedback after the review period has ended.
This creates two issues: late comments may be missed, or designers believe the work is complete only to receive additional feedback after the deadline . . . sometimes after the course has already gone to market.
Is there a way to formally close reviews once the deadline has passed to prevent late submissions?

Review 360 was designed to show a course through the review period. It was never meant to be a permanent platform for showing the course. So, as Chris-Hurst said, to prevent comments after the review period, delete the course.
Another option: disable comments.
Note, though, that this also hides all previously entered comments.

You can delete the course from the Review 360 dashboard.
