I am new to Storyline and am in desperate need of practice. What kinds of projects should I be attempting? Thanks in advance.

I would start right here on the front page of the Community portal. Try out the Storyline Challenges, or look at some of the New Interactive samples and try (re)creating without looking too much at the solutions or walkthroughs. One might surprised by the front page of the E-Learning Heros portal
