I am wondering if there is anyway I can create a question for students and they can they type their response. It would be an open ended question that students use their own knowledge to respon...

As a follow up question, is there a possibility to create an essay question and when the learner submits their answer, they see all answers that have been provided already by other learners?

Looks like you need a course that can connect to a database to pull up existing responses. There isn't a way to do this in Storyline 360, but if there is a form-based third-party website that can, you can embed this to your Storyline 360 course as a web object.
